Inspired by: Clean Food Dirty Girl’s 5- Minute Instant Pot Cheesy Sauce Spicy, creamy and totally cheesy, you won’t believe this queso is vegan and veggie based! You will never need another Queso recipe. This is the one. INGREDIENTS 2 cups peeled and chopped potatoes (or about 3 medium-sized potatoes) 1 cup chopped carrots (1 large carrot) 1 small onion, chopped 3-4 cloves fresh garlic, peeled and roughly chopped 1 tsp ground turmeric, or 1 Tbsp chopped turmeric root if available 2 cups vegetable stock or water 1⁄2 cup soaked and drained raw cashews (or substitute 1⁄4 cup sunflower seeds or 1⁄4 cup ground flax seed) 1⁄2 cup nutritional yeast 1-2 tsp hot sauce or 1⁄4 teaspoon cayenne powder 1 tsp salt Serves 10.
