Sublime summer passion fruit pie

If you’ve ever seen me freak out about passion fruit anything on the Internet, you know the obsession is real. This rare and expensive tropical fruit is in the upper echelon of fruits. It’s sour, sweet, fragrant, and just magical. I’m satisfied just smelling them over and over…and you know how much I like to smell things! I had to check a passion fruit dessert off my wish list. This slice of heaven is it, and it puts the fruit at the forefront. No passion fruit, no problem. Swapping passion fruit for something like mango or even dragon fruit would be cool (you can buy them in the frozen aisle!). If using one of those swaps, I would add some lime or lemon juice to tart it up. Eggless egg salad

This easy to make vegan recipe is ideal for lunches and is packed with protein for afternoon energy! Makes 3 to 4 servings | Takes 30 min Ingredients: 350 grams extra firm tofu (2 pkg) 225 mL Vegenaise 1 Tbsp Dijon mustard ¼ cup organic red onion, diced small ½ cup organic celery, diced small 1 Tbsp organic ground turmeric ½ tsp black pepper ½ tsp sea salt Dash of Bragg liquid soy seasoning Drain the tofu and pat dry with paper towel. Pulse quickly in a food processer until it reaches the consistency of cooked ground beef. You can also grate the tofu with a hand grater if needed. In a small bowl, mix Vegenaise with turmeric, Dijon, black pepper, sea salt and Bragg liquid soy seasoning (“Bragg’s” for short). Smoky Jackfruit “chicken” salad

A delicious spring or summer vegan recipe…you can make it winter too if you want to feel more like summer. I recently started experimenting with jackfruit recipes, and I discovered that jackfruit makes a fantastic sub for chicken in a traditional chicken salad. My goodness, it’s delicious (and not only is jackfruit delicious, it’s rich in vitamin C too)! Because jackfruit has such a mild flavour, it takes on all the wonderful flavours in this dish—tangy lemon and dill, creamy eggless mayo, savoury garlic, and smoky paprika. I’ve added fresh vegetables like celery, green onion, and bell peppers to give it a great crunch and loads of fibre. Serve this salad in pieces of Boston or Bibb lettuce, in a wrap, sandwich, or on crackers. To boost the protein, I like adding hemp hearts.
