This vegan-friendly bowl is all about the contrast between warm, nutty quinoa, crispy pan-seared chickpeas, and cold, spicy, fresh-cut Daikon Kimchi.
Part 1: The Fresh Daikon Kimchi (Kkakdugi style)
Make this first so it can “marinate” while you prep the rest.
Ingredients:
- 2 Large Daikon Radishes, peeled and cut into 1-inch cubes
- 3 tbsp Coarse Sea Salt + 2 tbsp Sugar (for prepping the radish)
- 1/2 cup Gochugaru (Korean chilli flakes)
- 1/4 cup Soy Sauce (replaces fish sauce for a vegan version)
- 3 tbsp Minced Garlic + 1 tsp Minced Ginger
- 5 Scallions, chopped into 1-inch pieces
- Optional: 1/2 grated Asian pear or apple (for natural sweetness)
Instructions:
- The Salt “Sweat”: Toss the daikon cubes with the salt and sugar. Let them sit for 45 minutes. They will release a lot of water.
- Drain: Pour off the water, but save 1/4 cup. Do not rinse the radish!
- The Paste: Mix the Gochugaru, soy sauce, garlic, ginger, grated fruit, and the reserved 1/4 cup of radish water.
- Toss: Combine the paste and scallions with the radish cubes. Mix well (wear gloves!) and set aside.
Part 2: The Quinoa & Crispy Chickpeas
Ingredients:
- 2 cups Cooked Quinoa (warmed)
- 2 cans (15 oz) Chickpeas, rinsed and patted very dry
- 2 tbsp Olive Oil
- 1/2 tsp Cumin + Salt/Pepper to taste
- Optional Garnish: Fresh cilantro and toasted sesame seeds
Instructions:
- Sear the Chickpeas: Heat the olive oil in a large skillet over medium-high heat. Add the chickpeas in a single layer.
- Get the Crunch: Let them sit undisturbed for 2-3 minutes to get a golden crust, then shake the pan. Continue cooking for 5-8 minutes until they are blistered and slightly crispy.
- Season: Toss with cumin, salt, and pepper in the last minute of cooking so the spices don’t burn.
Part 3: Assemble the Bowl
- Start with a generous base of warm quinoa.
- Top with a heavy scoop of the crispy chickpeas.
- Add a large helping of the cold, fresh Daikon Kimchi.
- The Finishing Touch: Drizzle a little of the red kimchi juice over the quinoa and garnish with sesame seeds and cilantro.
